This is a very exciting collaborative class - with Stream Farm and Dave Giles Butchers!
Time: 10am to 4pm
Date: Saturday 16th November
Where: Big Nath's HQ, Backwell
We will have a side (half a cow!) of beef from Stream Farm. This will be organic, pasture-fed beef. The day will include:
*Talks from Will (Farmer at Stream Farm), about regenerative sustainable farming.
*An introduction and demos from Jack (Butcher at Dave Giles), including about different cuts like steaks and chuck
*Talks and demos from Big Nath - including which cuts are best slow cooked and smoked
*And, of course, a beefy feast!
DAVE GILES BUTCHERS
This family butchers, based in Bishopston, was founded in 1990 by the late Dave Giles. Still run by the family - now Amy and her son Jack, the shop prides itself on sourcing the best quality, local meat at an affordable price. Their suppliers include Otter Valley Poultry, Stillmans and Stream Farm.
Jack is 25 and has been working at the shop since 2012. He is a massive football fan and loves any sort of sport.
STREAM FARM
Stream Farm is a idyllic bustling enterprise nestled in Bridgewater. The team have multiple farming outlets, all complimenting each other and with sustainability at their core. Whether, rainbow trout, pasture-fed organic beef, free-range chickens or their apple juice (where the egg-laying hens run through the orchard).
