A deep dive into real-deal Mexican live-fire cookery, featuring techniques and flavour architecture inspired by regional traditions.
Example dishes we’ll cook together:
• Lamb Barbacoa – slow-cooked, fire-roasted lamb wrapped in leaves
• Cochinita Pibil – fire-roasted achiote pork
• Tacos al Pastor – spit-roasted marinated pork or chicken with grilled pineapple
• Carne Asada – smoky, flame-kissed steak
• Tlayudas (Oaxacan Pizza)
