Smoked Chicken Legs


6 chicken legs (separated into thighs and drumsticks)

2 tablespoons olive oil or 2 tablespoons of your favourite hot sauce

Tin of Big Nath’s BBQ rub

3 tablespoons Big Nath’s BBQ sauce


Pre-heat smoker to around 240C and smoke using fruit wood (cherry or apple etc)

Pat dry the chicken legs

Put chicken legs into a large bowl, add the olive oil or hot sauce and toss the chicken in oil or hot sauce (this will act as a binder for the rub)

Use roughly half a tin of Big Nath’s BBQ rub, rub all over the chicken

Evenly space out chicken on racks in the smoker and smoke for approximately 2-3 hours or when the chicken has an internal temperature of 75-80 C

Remove the chicken from the smoker, place in a large bowl and toss in Big Nath’s BBQ sauce then add back to the smoker for approximately 20-30 mins so the sauce has set

Remove from the smoker and drizzle Big Nath’s BBQ sauce all over the chicken
